Text is a string of letters or numbers or words or characters. The term is usually used in a computer context.
A text is a piece of written work, but rather than referring to a book or a newspaper it is usually speaking either about an academic article or about something non-academic being viewed with a level of academic abstraction applied to it, so that whoever is presenting this "text" in their paper or lecture can disect it and deconstruct it. This is performed seemingly impartially, although perhaps the real goal is to bewilder the audience with confusing jargon in order to subtly implant certain ideas in their heads.
